The Art of Thawing: Safety First
Safely thawing a frozen turkey is the most important first step. Improper thawing can allow harmful bacteria to grow. There are two safe methods.
Refrigerator Thawing (Recommended)
This is the safest and most reliable method, though it requires advanced planning. You simply place the frozen turkey, still in its original wrapper, on a tray or in a pan (to catch any drips) and put it in the refrigerator.
Rule of Thumb: Allow approximately 24 hours of thawing time for every 4-5 pounds of turkey.
A large 20-pound turkey can take 4 to 5 full days to thaw completely in the fridge, so be sure to plan ahead!
Cold Water Bath Thawing
This method is much faster but requires more active attention. Place the turkey in a leak-proof plastic bag to prevent cross-contamination and submerge it in a sink or large container full of cold tap water.
Rule of Thumb: Allow approximately 30 minutes of thawing time per pound. Crucially, you must change the water every 30 minutes.
Changing the water is essential to ensure the surface of the turkey stays cold enough to prevent bacterial growth. A 16-pound turkey would take about 8 hours to thaw using this method. Once thawed, it should be cooked immediately.
Roasting Your Turkey to Perfection
Once your turkey is thawed, the next step is roasting. Our calculator provides a time estimate, but the only way to guarantee a perfectly cooked, safe turkey is to use a digital meat thermometer.
The turkey is done when the internal temperature reaches 165°F (74°C) at the thickest part of the thigh, without touching the bone. Our calculator uses standard USDA time recommendations for an oven set to 325°F (163°C).
To Stuff or Not to Stuff?
While traditional, cooking stuffing inside the turkey is no longer recommended by food safety experts. It's very difficult for the stuffing in the dense center of the bird to reach the safe temperature of 165°F without the breast meat becoming dry and overcooked. It is much safer and more effective to bake your stuffing in a separate casserole dish. If you do choose to stuff your turkey, you must use a food thermometer to ensure the center of the stuffing itself reaches 165°F. This will significantly increase the total roasting time, which our calculator accounts for.

No, absolutely not. Thawing a turkey on the kitchen counter is extremely dangerous. As the outside of the turkey thaws, it enters the temperature "danger zone" (40°F - 140°F), where bacteria can multiply rapidly, while the inside remains frozen. Never leave a turkey out at room temperature for more than two hours.
How long can a thawed turkey stay in the fridge?
Once your turkey is fully thawed in the refrigerator, it is safe to keep it in the fridge for another 1 to 2 days before you need to cook it.
What's the best way to know my turkey is done?
A meat thermometer is the only reliable way. Roasting times are just an estimate. Check the temperature in three places: the thickest part of the breast, the innermost part of the thigh, and the innermost part of the wing. All should read at least 165°F.
